Happy National Registered Dietitian Day
This is my interpretation of this year’s theme for National Nutrition Month® – “Eat Right With Color”. Of course I’m totally addicted to fiber in whatever form it comes in so….I just dug deep in to my stash for some inspiration!
What does “Eat Right With Color” mean to you?

i like colorful food – bright fruits and curries and sauces and veggies. the only color on your palette i’m not sure of is the blue… trying to think of something blue i eat – other than cotton candy.
LOL Monica…cotton candy works, but how about blueberries? That’s the only blue food I can think of…there are blue potatoes and carrots now too, but I’ve never tried them.

I am the daughter of a Home Economics Teacher, so, I learned a long time ago that your plate MUST be colorful. There is nothing worse than a plate of food that is all the same color!
